Tasty Seared Tuna Cakes

My favorite recipes the ones that I can open my pantry and fridge to get the needed ingredients. These Tasty Seared Tuna Cakes are perfect!

Canned tuna, bread crumbs and eggs are usually on hand. The 3/4 cups of veggies can be adapted to what you've got in the fridge.

What's even better is how quick they are to make... just 20 minutes!

These are great served on a bed of wilted spinach or in a whole grain bun, tortilla or pita. Enjoy!


Tasty Seared Tuna Cakes (makes 6)

2, 5-ounce cans tuna, drained

2 eggs

¼ cup diced onion

¼ cup diced red bell pepper

¼ cup chopped parsley

1 tablespoon lemon juice

¼ cup Parmesan cheese

½ cup Italian-seasoned bread crumbs

Salt and freshly ground pepper

Olive oil

In a bowl, combine all ingredients. Shape tuna into 6 patties, 1-inch thick (using a scant ½ cup for each). Cook in a lightly oiled skillet on medium-high heat until browned on both sides (5 minutes each).
